Sun-Dried Tomato Dip

Ingredients:
1/4 cup sun-dried tomatoes
Balsamic vinegar
1/3 cup sour cream
1/3 cup mayonnaise
1/3 cup plain yogurt
Two cloves garlic, finely minced
1 tablespoon fresh basil, chopped (or 1-teaspoon dried)
1/4 cup green olives, chopped

Directions:
Place tomatoes in a small bowl and add balsamic vinegar until just covered. Allow to soak for about an hour.

Remove tomatoes from vinegar and drain well. Chop finely and mix with other ingredients.

Keep in refrigerator until ready to serve.

* No-salt or lightly salted nuts are recommended.

Recipe makes 16 servings; 3.5 carbohydrates per serving.
