Mock Mashed Potatoes
Low Carbohydrate Recipe
Cooked cauliflower processed with sour cream. Garnish with grated cheese and fresh minced chives.
2 cups * cauliflower, finely chopped
1 tablespoon sour cream, or more to taste
1 tablespoon butter
Salt and black pepper to taste
*Frozen cauliflower works very well.
Steam or microwave cauliflower until very soft. Put cauliflower in blender or food processor with butter and sour cream, blend. Add salt and pepper to taste. Serve hot.

Bonus: Hamburger Gravy and Mock Mashed Potatoes
1 medium onion
1/2 pound ground beef
1 teaspoon garlic powder
Salt and pepper to taste
1/8 cup sour cream
2 ounces cream cheese
1/2 bag frozen cauliflower
2 tablespoons butter
Saute onion in oil in pan. Add meat and brown. Add spices and water and cook until water boils. Turn down heat. Add sour cream and cream cheese and simmer 10 minutes until gravy thickens. (DO NOT BOIL). Mash cauliflower with butter, salt and pepper. Serve hamburger "gravy" over "potatoes." Serves 2 at 10 carbs each (7 NET carbs).
