Hot Dog Soup
Low Carbohydrate Recipe

Ingredients:
2 tablespoon oil
1/2 onion thinly sliced
1 package sauerkraut (1 lb) rinsed, drained
4 cooked hot dogs sliced
2 cans reduced-sodium beef broth (14-1/2 oz each)
1 can water
2 teaspoons mustard
2 packets sugar substitute
1 bay leaf
Salt to taste
Freshly ground black pepper to taste

Directions: Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened. Stir in sauerkraut, hot dogs, broth, water, mustard, sugar substitute and bay leaf.

Simmer 5 minutes for flavors to blend.

Remove bay leaf. Add salt and pepper to taste.

This recipe yields 4 servings.
