Low Carbohydrate Recipe

Add protein to this fabulous side dish Greek salad and it becomes a very posh summer lunch or supper.

Basic Greek Salad


10 lettuce leaves, torn into bite-size pieces
1/2 pound feta cheese
3 whole tomatoes, cut into wedges
1 whole cucumber, sliced diagonally
1/2 cup Kalamata olives
1 Spanish onion, finely bias sliced
1 scallion, chopped
1/2 green bell pepper, sliced thin
6 radishes, sliced
1 teaspoon oregano

1/2 cup vegetable oil
1/4 cup white wine, or vinegar
1 tablespoon dried oregano
1 tablespoon lemon juice
1 tablespoon lemon rind, grated
1 clove garlic, crushed

Recipe Directions

Combine first recipe ingredients.

Mix dressing ingredients in a jar. Shake well.

Pour dressing over salad when ready to serve. Garnish the salad with anchovies if desired.
