Cabbage Lasagna
Low Carb Recipe
Instead of carb-laden noodles, this recipe uses cabbage. You may be surprised at how close this tastes to real lasagna with the oregano, tomato paste, mozzarella, etc.
The humble cabbage is a very versatile vegetable. It's great for coleslaw, but cabbage can bring so much more to your table. Some varieties are great sources of vitamin C.

Recipe Ingredients
1 pound ground chuck
1 cup chopped onion
1/2 chopped green pepper
1 medium head cabbage
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon oregano
1 small can tomato paste
8 slices (1 ounce each) mozzarella cheese
Recipe Directions
Brown ground chuck, onion, green pepper.
Boil cabbage until tender then set aside, saving 2 cups of liquid.
Combine 2 cups of liquid, oregano, tomato paste, salt and pepper and simmer, stirring often. Add meat mixture to sauce pan. Simmer and stir often.
In a buttered 9 x 13-inch pan, layer cabbage and tomato mixture. Top with mozzarella cheese slices as your very last layer only.
Bake 400 degrees for 30 minutes until cheese is browned.
Recipe makes 8 servings.
