Broccoli Pear Salad and Pizza Broccoli
Low Carbohydrate Recipe
No more boring broccoli! Make one of these broccoli side dishes and truly enjoy. One is fruity with the addition of pears, while the other is deliciously flavored like pizza.
1/3 cup canola oil
2 tablespoons white wine vinegar
1 tablespoon sherry
1/2 teaspoon freshly grated ginger
1/4 teaspoon allspice
1 teaspoon Organic Blue Agave
2 cups broccoli, cut into bite-sized pieces
1/2 cup walnuts
1/4 cup red onion, diced
1-2 ripe pears, cut into thin slices
Mix all the dressing ingredients in a small container or jar. Shake or whisk to combine.
Mix the salad ingredients together in a large salad bowl; separate into 8 serving bowls. Serve with dressing.
Recipe makes 8 servings
Serving size: 1 salad (with about 2 tablespoons dressing)

1 cup chopped broccoli
2 tablespoons pizza sauce
1 tablespoon Parmesan cheese
1 ounce Mozzarella cheese -- diced
1/2 ounce pepperoni -- diced
2 tablespoons onion -- sliced
1 tablespoon olive oil
Steam or microwave the broccoli until just crisp-tender. Add the pizza sauce, Parmesan cheese, and pepperoni. Microwave about 40 seconds longer. Toss the broccoli mixture with the rest. Recipe makes two servings.
