Oven Barbecued Chicken can be just as good cooked in the oven - well almost! Your chicken bakes in a mixture of white vinegar, dry mustard, black and red pepper.

Oven Barbecued Chicken

Ingredients

1/4 cup butter
1 chicken, cut-up
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon ground black pepper
1/2 teaspoon ground red pepper

Recipe Directions

Melt butter in a skillet and brown chicken on all sides. Transfer chicken to baking dish.

Add other ingredients to pan, stirring to loosen browned particles that cling to bottom. Pour over chicken. Cover and bake chicken at 325-degrees for 45 minutes. Uncover, baste and cook uncovered another 15 minutes.

Variation: Barbecue Chicken Monterrey

3 boneless chicken breasts
3/4 cup barbecue sauce
6 slices bacon
6 oz shredded Cheddar

Pound chicken breasts until thin. Saute in pan until just about done. In the meantime, cook the bacon. Pour about 1/4 cup barbecue sauce over each breast, top with 2 pieces of bacon, and sprinkle with cheese. Cover just until cheese melts and serve. Serves 2 at 7 carbs each.
