Bacon Cheeseburger Quiche

Low Carbohydrate Recipe

This Bacon Cheeseburger Quiche can be packaged in Ziplocs or plastic containers for meals quickly microwaved over the next 3 to 5 days. Does not freeze well.

Bacon Cheeseburger Quiche


1 pound very lean hamburger
1 small chopped onion
4 slices bacon, broken into bits
3 eggs
1/2 cup mayonnaise
1/2 cup half-and-half
8 ounces shredded Chedder or Swiss cheese
Garlic powder to taste (optional)
Freshly ground white pepper to taste

Recipe Directions

Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

Preheat oven to 350 degrees.

Combine remaining ingredients in mixer bowl and whip well. Pour mixture over beef "crust" and bake 40 to 45 minutes until top is browned and "set". Cool 15 to 20 minutes before slicing.

Variation: Cheeseburger Quiche

Block of Cheddar Cheese 1/2 pound ground beef
1/3 cup chopped onion
2 eggs
1/2 cup mayonnaise
1/4 cup cream
6 ounces shredded Cheddar cheese
Salt and pepper

Brown ground beef and onion. Drain. Beat eggs and mix in mayonnaise, cream, cheese and seasoning. Put beef mixture in sprayed pie pan. Pour custard over. Bake at 350 degrees for 45 minutes. Let stand 10 minutes before cutting. Serves 3 at 3 carbs. Can add mushrooms or any other vegetable - just include the carbs.
