Shrimp Louis Salad Low Carbohydrate Recipe
Cooked shrimp and scallions tossed in a simple freshly made thousand island dressing.
Ingredients:
2 cups small shrimp, cooked and shelled
One scallion, chopped
Dressing:
1/2 cup mayonnaise
1 tablespoon ketchup
1 tablespoon dill pickle relish
This recipe makes two servings.

Directions:
Make dressing by mixing well the mayonnaise, ketchup and relish. Toss shrimp, scallions and dressing. Chill and serve.
Note:
Check your labels when choosing your relish. Avoid sweet pickle relishes which are high in carbs. Your dill pickle relish should be 1g carb per tablespoon or less.
