Meat Loaf
Low Carbohydrate Recipe

Ingredients:
1 pound ground chuck
4 ounces cottage cheese, small curd
One large egg
1/4 cup onion, chopped
Two stalks celery, chopped
1/2 can tomatoes, chopped (7 ounce)
1/4 cup bell pepper, chopped
1/2 cup spinach, cooked and shredded
Salt to taste
Pepper to taste
Garlic powder to taste

Directions:
Mix all the ingredients in large bowl. Form into a loaf and place into a loaf pan or into a baking dish.

Bake at 350-degrees for about one hour.

Recipe makes four servings.
