Basic Greek Salad
Low Carbohydrate Recipe

Ingredients:
Ten lettuce leaves, torn into bite-size pieces
1/2 pound feta cheese
Three whole tomatoes, cut into wedges
One whole cucumber, sliced diagonally
1/2 cup Kalamata olives
One Spanish onion, finely bias sliced
One scallion, chopped
1/2 green bell pepper, sliced thin
Six radishes, sliced
1 teaspoon oregano

Dressing:
1/2 cup virgin olive oil
1/4 cup white wine, or vinegar
1 tablespoon dried oregano
1 tablespoon lemon juice
1 tablespoon lemon rind, grated
One clove garlic, crushed

Directions:
Combine first ingredients. Mix remaining ingredients in a jar. Shake well. Pour over salad when ready to serve. Garnish the salad with anchovies if desired.
