Low Carbohydrate Recipe
Algerian Salad is brimming with healthful ingredients including cucumber, bell pepper, green olives and seasoned with coriander and mint.
3/4 cucumber, diced
3/4 green bell pepper, cored, seeded and diced
1 ounce green olives, pitted and chopped
2 teaspoons coriander, chopped
1 tablespoon chopped mint plus
1 teaspoon chopped mint
1-1/4 teaspoons wine vinegar
1 tablespoon plus 1 teaspoon olive oil
Combine all ingredients in a bowl. Season with salt and pepper to taste.
