Recipe Ingredients

3/4 cucumber, diced
3/4 green bell pepper, cored, seeded and diced
1 ounce green olives, pitted and chopped
2 teaspoons coriander, chopped
1 tablespoon chopped mint plus
1 teaspoon chopped mint
1-1/4 teaspoons wine vinegar
1 tablespoon olive oil plus
1 teaspoon olive oil

Recipe Directions

Salad Combine all ingredients in a bowl. Season with salt and pepper to taste.

Mix thoroughly.
