Great deviled eggs - truly the ultimate! We have four variations for you to choose from - regular, with ham, with smoked salmon and with crabmeat.<

Ultimate Deviled Eggs

3 tablespoons butter, soft
6 hard-boiled eggs
2 tablespoons mayonnaise
1/2 teaspoon Dijon-style mustard
1/4 teaspoon prepared horseradish
Salt to taste
Freshly ground black pepper to taste

Peel and cut eggs lengthwise once they have cooled. Scoop out yolks. Set whites on a plate and prepare the yolk mix. Put the yolks in a mixing bowl and combine the other ingredients. Mix well.

Deviled Egg Platter For the smoothest filling, press the mixture through a sieve. For the most elegant presentation, you can put yolk mixture in a pastry tube and select an interesting, large nozzle before you fill the whites with the mixture. Otherwise, fill the eggs with a teaspoon, creating a smooth mound. For a touch of color, dust the eggs with paprika. Refrigerate until ready to use.

Variation: Ultimate Deviled Eggs with Ham

Ham Sliced 3 tablespoons butter, soft
6 hard-boiled eggs
2 tablespoon mayonnaise
1 teaspoon Dijon-style mustard
2 ounces finely minced ham
1/4 teaspoon prepared horseradish
Salt to taste
Freshly ground black pepper to taste

Follow instructions above. This recipe adds 2.0 grams of carb to the total. A serving has 1.0 gram of carb.

Variation: Ultimate Deviled Eggs with Smoked Salmon

Salmon 3 tablespoons butter, soft
6 hard-boiled eggs
2 tablespoon mayonnaise
2 ounces finely chopped smoked salmon, lox, or nova
1/2 teaspoon Dijon-style mustard
1/4 teaspoon prepared horseradish
Salt to taste
Freshly ground black pepper to taste

Follow instructions above. This adds less than 1.0 gram of carb to the total. A serving has 0.8 gram of carb.

Variation: Ultimate Deviled Eggs with Crabmeat

Canned Crabmeat 3 tablespoons butter, soft
6 hard-boiled eggs
2 tablespoons mayonnaise
1 tablespoon low-carb ketchup
1 teaspoon lemon juice
2 ounces cleaned and finely flaked crabmeat
Salt to taste
Freshly ground black pepper to taste

Follow instructions above. One serving has 0.9 gram of carb.

Variation: Ultimate Chicken Deviled Eggs

6 hard boiled eggs
1/2 cup chicken breast, cooked and chopped fine
3 tablespoons mayonnaise
1 tablespoon grated onion
1 teaspoon Dijon mustard
1/2 teaspoon dry mustard
1/4 teaspoon hot pepper sauce
1 tablespoon parsley, minced (for garnish)

Cut eggs lengthwise in half. Remove yolks and place in a small bowl.

Mash yolks with a fork. Add chicken, mayonnaise, onion, Dijon mustard, dry mustard, hot sauce, and parsley. Blend well. Stuff egg whites with yolk mixture. Sprinkle tops with paprika to garnish. Cover and refrigerate until serving time.
