Spicy Chicken Hash

Low Carbohydrate Recipe

A chicken hash mixture of onion, red pepper, mushrooms and diced cooked chicken cooked in a creamy rich sauce made with cream, chicken broth and seasonings.

Ingredients

Sauce:
3 tablespoons butter
1 cup cream
1 cup chicken broth
Salt and pepper
Guar Gum

Hash:
2 tablespoons butter
1 medium onion, chopped
1 red pepper, chopped
8 ounces mushrooms, sliced
1-2 cups diced cooked chicken

Recipe Directions

Diced Chicken

Mix all sauce ingredients except thickener and heat in pot. Mix thickener with a little water and stir in. Cook until thickened.

Saute onion and pepper in butter. Add mushrooms and salt and pepper; saute until done. Mix in chicken and sauce; serve.

Recipe Note

The original recipe called for all ingredients to be transferred to a baking dish, and baked at 400 degrees for 30 to 40 minutes; however, this method was quicker and tasted great.
