Salmon with Peanut Sauce with tender flaky salmon fillets made hot with packed baby greens, broccoli, chicken broth, mayonnaise, soy sauce, sherry, Asian hot chili sauce, fresh ginger and garlic.

Fresh Salmon for Salmon with Peanut Sauce


4 salmon fillets
4 cups baby greens
4 cups broccoli, cooked
3 tablespoons sugar free peanut butter

3 tablespoons chicken broth
2 tablespoons mayonnaise
1 tablespoon soy sauce
1 tablespoon sherry
1-1/2 teaspoon Asian hot chili garlic sauce
1/2 teaspoon fresh ginger
1  garlic clove
1 packet sweetener (such as Stevia)

Recipe Directions

Heat oven to 300 degrees.

Puree sauce ingredients in blender until smooth. Line pan with foil. Place fish skin side down and bake 17 to 18 minutes until fish flakes easily and center is slightly rosy.

Toss baby greens and broccoli with 1/4 cup peanut sauce. Divide on four plates. Top each salad with a piece of fish and drizzle remaining sauce over.
