Low Carbohydrate Recipe

Veal shanks in Osso Buco sauteed with onion and garlic then placed into a mixture of chicken broth and white wine flavored with rosemary and baked until tender.

Veal Shanks in Osso Buco

Ingredients

4 2-1/2-inch thick veal shanks (12 oz each)
1/8 cup protein powder
2 tablespoons butter
2 tablespoons olive oil
1 cup finely chopped onion
2 minced garlic cloves
1 cup white wine
1/2 cup chicken broth
1/4 teaspoon rosemary

Recipe Directions

Heat oven to 325 degrees.

Coat shanks with flour. Heat butter and oil in pan over medium heat. Add shanks and brown 3 to 4 minutes per side. Remove from pan. Add onion and garlic and saute 4 to 5 minutes until onion is translucent. Add wine, bring to gentle boil, scraping up browned bits. Boil 5 minutes until liquid is reduced by half.

Add broth, rosemary, salt and pepper. Arrange shanks in casserole with tight fitting lid and pour onion and wine mixture over. Cover, bake 2 hours until meat tender.
