Orange Spice Cookies
Low Carbohydrate Recipe
This recipe makes soft, cake like orange spice cookies with a tangy orange flavor that comes from the addition of orange zest or extract. Omit the orange for a plain spice cookie.
5 ounces pork rinds, finely ground
1/2 cup spoonable sweetener (such as Stevia)
1/2 cup Brown Sugar Twin
1 teaspoon baking powder
1 teaspoon baking soda
4 tablespoons cinnamon
1-1/2 teaspoon dried ground ginger
1/2 teaspoon ground nutmeg
1 tablespoon finely grated fresh ginger root
2 teaspoons finely grated orange zest
1 tablespoon pure vanilla extract
1/2 cup sour cream
Optional: 1/2 cup finely chopped walnuts
Preheat oven to 350 degrees.
Combine the pork rinds, sugar substitute, Sugar Twin, baking powder, soda, cinnamon ginger and nutmeg with a whisk until blended. In a separate bowl, beat the fresh ginger, orange zest, vanilla, sour cream and eggs together. Stir into the pork rind mixture until well blended.
Drop rounded tablespoons onto parchment lined baking sheets, 2-inches apart. Flatten and bake 8 to 12 minutes.
You can use 1/2 teaspoon orange extract in place of the orange zest or omit it for a plain spice cookie. Leaving out the walnuts will lower the count by 8 grams and the fiber by 4.
Recipe makes 40 cookies
