Low Carbohydrate Recipes

A filling meatloaf low carb style! Uses pork rind crumbs in place of bread crumbs to cut down on the carbs. Very tasty.

Ingredients

1-1/2 pound ground beef
1 cup pork rind crumbs
1 egg
1/3 cup tomato sauce
Salt and pepper to taste
2 tablespoons parsley
1/2 cup grated Parmesan
1/4 cup chopped onion

Recipe Directions

Preheat oven to 350 degrees.

Mix meat and other ingredients. Shape into firm oval loaf in shallow baking pan.

Bake 1 hour.

Variation I: Italian Turkey Meatloaf

Ground Turkey 1 pound sausage, cooked and diced
1 pound ground turkey
2 eggs
14 oz can diced tomatoes
1/2 cup onion, chopped
1 tablespoon parsley
1 cup pork rinds, crushed
1/2 cup Parmesan cheese
1/2 cup tomato sauce

Preheat oven to 375 degrees. Beat eggs and stir in other ingredients except meats. Mix in meats just until blended. Place meat in 8 s 8-inch glass baking pan. Bake 1 hour. Top with tomato sauce and bake 15 to 30 minutes more. Let stand 10 minutes before serving. Serves 4 at 9 carbs each.

Variation II: Smokey Meatloaf

Ground Beef 1 pound ground beef
1 cup crushed barbecue pork rinds, crushed
2 eggs
3 tablespoon minced dried onion
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke

Preheat oven to 375 degrees. Beat eggs and stir in other ingredients except meats. Mix in meats just until blended. Place meat in 8 s 8-inch glass baking pan. Bake 1 hour. Top with tomato sauce and bake 15 to 30 minutes more. Let stand 10 minutes before serving. Serves 4 at 9 carbs each.
