Low Carbohydrate Recipe

A delicious Italian Casserole with Crust with three satisfying layers - tomato sauce based Italian flavored beef mixture topped with a Mozzarella cheese mixture and a nice Parmesan dough to top it all off.

1 pound ground beef
1/4 cup chopped onion
1 cup tomato sauce
6 ounces shredded Mozzarella
1/2 cup sour cream
1/4 cup whey protein
1/4 cup soy protein isolate
1 teaspoon baking powder
2 eggs
2 teaspoons melted butter
1/3 cup Parmesan cheese

Recipe Directions

Heat oven to 375 degrees.

Brown ground beef and onion. Drain. Stir in sauce.

In bowl, mix mozzarella and sour cream. In another bowl, mix protein powder, isolate, baking powder and eggs. Pour hot meat mixture into 2 quart baking dish. Spoon cheese mixture over.

Drop dough by tablespoons, then take spatula and smooth over top. Mix melted butter and Parmesan and spread over dough.

Bake 18 to 25 minutes until golden brown and topping is done.

Recipe Variation

You could use Carbquik Baking Mix in place of the whey protein and soy isolate - and eliminate the baking powder. This may alter the carb count, though. Carbquik contains no sugar, is high in fiber and protein and low in sodium.
