Espresso Cream and Ricotta
Low Carbohydrate Recipe
Espresso Cream and Ricotta is fast, easy and good, very low in carbs. Ricotta lends plenty of healthful low carb protein.
One half cup serving of whole milk ricotta cheese has 14g of protein. This is 28 percent of your daily value of protein, which helps you build strong muscles. The Ricotta cheese also contains much needed calcium, omega 3s, minerals and vitamins A, B12 and riboflavin.
1/4 cup espresso
1 teaspoon liquid sweetener
1/2 teaspoon vanilla
2 cups ricotta cheese
1/2 cup whipping cream
Cocoa, if desired
Note: To keep the carb count as low as possible, use sugar free whipping cream.
Combine the espresso, sweetener and vanilla. Beat the ricotta with a whisk to loosen it up.
Whip the cream until stiff and fold into the ricotta. Swirl in the espresso and fold it in lightly to leave it streaky.
Pile into 6 dessert dishes or wine glasses and dust with cocoa if you like.
