Cinnamon Nut Bread
Low Carbohydrate Recipe
This recipe makes a great bread with a wonderful cinnamon flavor. It does not rise much but the taste and texture are great.
1/2 cup Vital Wheat Gluten
1 tablespoon Organic Flaxseed Meal
1 tablespoon wheat bran
4 tablespoons ground walnuts
2 tablespoons sweetener (such as Stevia)
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 cup heavy cream
1 teaspoon vanilla
1 tablespoon oil
2 tablespoons water
Beat wet ingredients together. Blend dry ingredients. Mix together gently.
The batter should be the texture of oatmeal.
Spray or butter a small loaf pan (4 x 6). Spread mixture into pan. Bake 30 to 40 minutes.
Recipe makes 8 slices (thin slices)
Serving size: 1 slice
