Low Carbohydrate Recipe

This recipe makes very good, very Chocolate Fudge Muffins with a cupcake like consistency. The whey protein powder is low in carbohydrates, gives you energy and in general, is a power meal and snack solution.

Chocolate Fudge Muffins

Ingredients

1/3 cup  almond flour
1/3 cup whey protein powder
1/8 cup flax meal
1/3 cup spoonable sweetener (such as Stevia)
1 tablespoon Brown Sugar Twin
4 ounces cream cheese
1 tablespoon cocoa powder
1 ounce unsweetened chocolate
1 tablespoon butter
1 teaspoon vanillabr> 2 eggs
Chopped nuts (optional)

Recipe Directions

Soften cream cheese in microwave 20 to 30 seconds.

In separate dish, melt chocolate and butter. Add melted chocolate to cream cheese, and add eggs and vanilla. Mix well until smooth. Add all other ingredients.

Mixture shoul be fairly thick - if too thick, add a litle water. Bake at 350 degrees for 20 to 25 minutes.
