Choco Flax Muffins

Low Carbohydrate Recipe

Chocolate flavor whey protein powder and flax seed meal make up the flour base in these tasty muffins flavored nicely with maple extract.


1 cup Organic Flaxseed Meal
1/2 cup Chocolate Whey Protein Plus Powder
4 tablespoons oil
1/4 cup spoonable sweetener (such as Stevia)
2 large eggs, lightly beaten
2 teaspoons baking powder
2 teaspoons maple extract
1/2 teaspoon salt
2 ounces chopped almonds (optional)
1 cup water

Recipe Directions

Choco Flax Muffins

Preheat oven to 350 degrees.

Mix all of the ingredients in a bowl, let stand for 3 minutes. Spray a 12 muffin pan with non-stick spray. Spoon batter evenly into muffin tins. Bake 25 to 30 minutes.
