Chicken Fajita Casserole
Low Carbohydrate Recipe
A great Chicken Fajita Casserole using chicken breast meat seasoned with taco seasoning, salt, pepper and garlic. Onions, peppers, salsa and cheese are placed on top before broiling.
1 tablespoon oil
1 pound chicken breast, cut in strips
2 teaspoons taco seasoning mix Salt, pepper, garlic powder to taste
1/2 cup onions, thinly sliced 1 cup red and green pepper strips
1/2 cup salsa
8 ounces jack cheese, shredded
Brown chicken in oil, and stir in seasonings. When chicken is done, remove from pan. Add onions and peppers and cook a few minutes until crisp-tender. Put chicken into casserole dish. Top with onions and peppers. Spread salsa on top and sprinkle with cheese. Put under broiler for few minutes until cheese is bubbly and melted.
