Low Carbohydrate Recipe
Snapper fillets with Parmesan, Cheddar and Monterey Jack cheeses along with salsa and chopped parsley.
12 ounces snapper fillet
2 tablespoons Parmesan cheese
1 tablespoon butter
6 tablespoons salsa
2 ounces Monterey jack cheese, shredded
1 ounce Cheddar cheese, shredded
Salt and pepper to taste
Chopped parsley (optional)
Preheat oven 350 degrees.
Lightly coat the fish with Parmesan and saute in butter for about 1 minute on each side to seal juices. Place fish in lightly greased casserole and top with salsa.
Sprinkle Cheddar on the center of the fish and jack cheese on the ends (or mix cheeses and sprinkle over all.) Bake 10 to 12 minutes until fish is cooked. Garnish with parsley.
