Low Carbohydrate Recipe

Three delicious varitions of broiled salmon. First one have Broiled Mustard Salmon, then one with bacon, tomato and caper vinaigrette, and finally a tender broiled salmon with Dijon.


Broiled Salmon

1/3 cup sugar free pancake syrup
1 tablespoon Dijon mustard
Garlic powder to taste
Salt to taste
4 salmon fillets

Recipe Directions

Preheat broiler.

Heat all topping ingredients and brush salmon. Broil 10 minutes, brushing with topping occasionally. Pour rest of topping on salmon and broil 2 to 5 minutes more.

Broiled Salmon with Dijon Sauce

Dijon Mustard 1/2 cup mayonnaise
2 tablespoons Dijon mustard
3 tablespoons Parmesan
Black pepper to taste
12 oz. salmon filets

Heat broiler, and broil salmon for about 12 minutes. Mix other ingredients and spread over salmon. Put back under broiler for another 5 minutes, or until salmon is done to your satisfation. (If you put the sauce on too early, it gets really brown). Serves 3 at 1 carb per serving.

Broiled Salmon with Bacon, Tomato and Caper Vinaigrette

12 oz. salmon
4 slices bacon, cooked
1 medium tomato, diced
1 teaspoon capers
2 teaspoons parsley
1/2 teaspoon prepared horseradish
1 package Splenda
Salt, pepper, olive oil

Brush salmon with olive oil, sprinkle with salt and pepper and broil for 12 minutes. In meantime, heat all ingredients except bacon. Remove salmon from oven, spoon sauce over and top with crumbled bacon.
