Low Carbohydrate Recipe

Bobotie is also known as South African Lamb Curry. You can use ground beef but the lamb is more delicate.

Ingredients

1 pound ground lamb
1/4 cup onion, sliced
1-1/2 tablespoon curry powder
1 tablespoon sweetener (such as Stevia)
1/2 tablespoon lemon juice
1/2 grated apple
1/2 teaspoon nutmeg
3/4 cup whipping cream
2 eggs
Salt and pepper

Recipe Directions

Bobotie

Preheat oven to 375 degrees.

Brown lamb in pan and remove. Melt some butter and brown onions. Return lamb to pan and add curry, splenda, salt and pepper. Remove from heat and stir in lemon juice and apple. Pour mixture into casserole dish. Mix eggs, cream and nutmeg and pour on top of mixture. Bake 45 minutes.

This is really unusual but most of our staff loved it. You can use ground beef but the lamb is more delicate. You can also make this without the apple to reduce carbs further.
