Have you got the refried soybeans and tortillas? If you do, you are about to put a scrumptious meal of Bean and Cheese Burritos together in just a few minutes. Two makes a meal and one makes a marvelous low carb snack.

Bean and Cheese Burritos with Dip and Salsa


4 corn tortillas
1 cup refried black soybeans
1 cup shredded Cheddar or Jack cheese
Salt to taste
Freshly ground black pepper to taste

Recipe Directions

Note: If needed, soften tortillas in microwave (between paper towels) for a second. For more tips, see Warming Tortillas.

Put 1/4 cup refried beans on each tortilla; top with 1/4 cup shredded cheese.

Roll up tortillas and put them in a microwave-safe tray. Heat briefly on high until they are hot and the cheese has melted.

Delicious served with a spicy cheese dip...

Spicy Cheese Dip

Bowl of Spicy Cheese Dip 16 ounces Velveeta Cheese, cut into 1/2-inch cubes
15 ounce can black beans, rinsed
11 ounce can corn with red and green bell peppers, drained
1 cup hot chunky salsa

Combine all ingredients except crackers in microwaveable bowl. Microwave on High five minutes or until Velveeta is completely melted, stirring after three minutes. Serve with crackers.
