Yummy Apple Sauce Muffins
Low Carbohydrate Recipe
Yummy applesauce muffins made with healthful low carb soy protein isolate, oat flour, wheat gluten flour and flax seed.
3/4 cup soy protein isolate
1/4 cup oat flour
1/4 cup wheat gluten flour
1/4 cup ground Golden Flaxseed
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/4 teaspoon salt
1 cup measureable sweetener (such as Stevia)
1/4 cup Brown Sugar Twin
4 eggs, beaten
1 teaspoon pure vanilla extract
3/4 cup olive oil
1 cup unsweetened apple sauce
2-3 drops apple oil
1 tablespoon rolled oats 1 tablespoon oat flour
1 teaspoon Brown Sugar Twin (or adjust to taste)
Mix dry ingredients together, mix wet ingredients together. Add wet ingredients to dry ingredients and mix well.
Pour into sprayed muffin tins. Sprinkle with topping ingredients, if desired. Bake at 350 degrees, for approximately 25 to 30 minutes.
Variation for Pumpkin Spice Muffins
Add a 15-oz. can of pumpkin instead of apple sauce and apple oil.
