Southern Corn Bread and Ham Stuffing

Ingredients:
3 large celery stalks, diced
1 cup onions, chopped
1 cup bell peppers, chopped
18 oz. cornbread stuffing mix
3 cups water
10 ounces frozen corn kernels, thawed
6 ounces ham, extra lean, cooked and cubed
1/2 teaspoon black pepper

Directions:
Preheat oven to 325 degrees. Prepare a 13 x 9-inch casserole dish with cooking spray; set aside. In a 12-inch skillet over medium heat, cook celery, onions, and bell peppers until tender, stirring occasionally.

In mixing bowl, combine celery mixture, cornbread stuffing mixes, spice packets from mixes, water, corn, ham, and black pepper. Mix well.

Spoon into prepared dish.

Cover with foil and bake for 45 minutes or until heated through.
