Lemon Chicken Pasta Toss
Ingredients:
2 tablespoons cornstarch
1-3/4 cups chicken broth
2 tablespoons lemon juice, bottled
1 tablespoon Dijon mustard
2 cloves garlic, minced
9 oz. chicken breast strips, cooked
1 tablespoon parsley
8 ounces thin spaghetti, cooked
Directions:
In a small bowl, combine cornstarch, broth, lemon juice, mustard, and garlic. Mix well and set aside.
In a skillet, cook chicken until is no longer pink; set aside.
In another skillet, cook cornstarch mixture until thickened. Add chicken strips. Cook until heated through.
Sprinkle parsley over top.
Toss with cooked spaghetti.
Makes 6 servings.
