Light Parsleyed Potatoes

Ingredients:
4 russet potatoes, peeled and cut into eighths
1/4 cup parsley, finely chopped
1 tablespoon unsalted butter
1/4 teaspoon salt optional, or to taste

Directions:
Cover potatoes with salted water in a heavy saucepan and bring to a boil.

Reduce heat to low.

Cover and simmer 15-20 minutes or until potatoes are tender.

Drain water.

Stir in remaining ingredients and toss.

This recipe serves 4.
