Rosemary-Roasted Sweet Potatoes Low Calorie Recipe
Serve as a side dish to accompany a poultry entree.
Ingredients:
2 pounds sweet potatoes, cut into chunks
1/4 cup toasted pine nuts
3 cloves garlic, peeled and coarsely chopped
1 tablespoon chopped fresh rosemary, or 1/2-tablespoon dried
2 tablespooons chopped parsley
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon black pepper
