Low Calorie Recipe

A delicious and pretty standard potato salad recipe with celery, bell peppers, onion and calorie saving fat free mayonnaise.

Potato Salad

Ingredients

6 medium whole potatoes, peeled and cooked
6 whole hard boiled eggs, chopped
2 stalks celery, sliced thin
1/2 cup bell peppers, chopped
1/2 cup onions, chopped
1-1/4 cup fat free mayonnaise
1 tablespoon white vinegar
1/2 cup prepared mustard
1/4 cup pickle relish
1-1/2 teaspoon salt
1/2 teaspoon black pepper

Recipe Directions

In a covered saucepan, cook potatoes in boiling water for 20 minutes. Peel and cube them. Let chill overnight. In a covered saucepan, cook eggs for 15 minutes. In a mixing bowl, combine, egg whites, celery, peppers, onions, mayonnaise, vinegar, mustard, relish, salt, and black pepper until thoroughly combined. Then, add potatoes. Chill for 6 to 24 hours.
