Pasta with Blue Cheese Sauce

Gnocchi works well for your pasta in this cheesy side dish tossed with tomatoes, herbs salt and pepper.

Recipe Ingredients

1 tablespoon blue cheese
2 tablespoons light cream cheese
1 tablespoon sherry
1 large onion
1 cup chopped tomato
2 cups pasta
2 teaspoons each parsley, basil and oregano
1/2 teaspoon each salt and black pepper

Recipe Directions

Blue Cheese Preheat oven to 350 degrees. Roast onion in oven for half an hour or until tender. Allow to cool. Peel and quarter. In blender, blend onion, blue cheese, cream cheese and sherry until very smooth. Cook pasta (gnocchi works well) in salted boiling water until done. Drain and toss with tomatoes, herbs, salt and pepper. Stir in sauce and serve.
