Meatball Kraut Skillet

Low Calorie Recipe

Delicious meatballs served with a mixture of sauerkraut and onions with rice and crushed tomatoes.

Meatball Kraut Skillet


1 whole egg white, slightly beaten
1/4 cup skim milk
3 cups white bread crumbs
1 teaspoon salt
1/2 teaspoon black pepper
1 pound ground chicken breast, skinless
1/2 tablespoon olive oil
27 ounces sauerkraut, canned and drained
1/2 cup onions, chopped
3/4 cup long grain rice, uncooked
1-1/2 cup water
14-1/2 ounce crushed tomatoes

Recipe Directions

In a mixing bowl, combine egg white, milk, bread crumbs, salt, and black pepper. Add chicken and mix well. Shape into 12 meatballs. In a skillet, heat oil over medium heat. Add meatballs and cook until no pink remains in chicken. Remove meatballs from skillet.

In same skillet, combine sauerkraut and onions. Stir in rice and water. Add balls and crushed tomatoes. Bring to a boil. Reduce heat and simmer, covered for 30 minutes or until rice is done.

Recipe Note

Not all ground poultry is as healthy as one may think. Ground turkey or chicken often includes the skin and dark meat, adding a lot of fat and calories. Look for lean or breast on the label to ensure it includes only breast meat, which is much leaner.
