Low Calorie Recipe
Hearty in flavor, hearty in healthful ingredients and extraordinarily satisfying!
2 cups red and green bell peppers, chopped
1 cup onions, chopped
1 clove garlic, minced
1 pound ground chicken breasts, skinless
3 tablespoons unbleached flour
29 ounces crushed tomatoes
45 ounces dark red kidney beans, canned, undrained
8 ouncestomato sauce
2 tablespoons chili powder
1 teaspoon salt
In a skillet, cook bell peppers, onions, and garlic. Cook until tender. Stir in chicken and flour. Cook until chicken is no longer pink.
Add crushed tomatoes, kidney beans, tomato sauce, chili powder, and salt. Bring to a boil; then reduce heat. Simmer, stirring occasionally for 30 minutes.
Not all ground poultry is as healthy as one may think. Ground turkey or chicken often includes the skin and dark meat, adding a lot of fat and calories. Look for lean or breast on the label to ensure it includes only breast meat, which is much leaner.
