Summer Squash Julienne

For Summer Squash Julienne , dry saute onion over medium-high heat until soft. Add zucchini, squash and salt and pepper to taste.
1/2 cup thin sliced scallions
2 medium zucchini, cut into 2-inch julienne strips
2 medium yellow squash, cut into 2-inch julienne strips
1 medium red bell pepper, chopped fine
Dry saute onion over medium-high heat until soft.
Add zucchini and squash. Salt and pepper to taste.
Continue cooking until vegetables are tender - about 5 minutes.
Yield: 4 servings
