Low Calorie Recipe
For this Tuna Sandwich, combine tuna, mayonnaise, and relish in a small bowl. Season with salt and pepper to taste. Mix thoroughly, stirring in relish juice for added tartness if desired.
1/2 pound water packed canned albacore tuna
1/3 cup mayonnaise
2 tablespoons sweet relish
8 slices bread, toasted, if desired
4 lettuce leaves
Combine tuna, mayonnaise, and relish in a small bowl. Season with salt and pepper to taste. Mix thoroughly, stirring in 1-1/4 teaspoon of the relish juice for added tartness, if desired.
Divide mixture between half the bread slices. Top with lettuce leaf and remaining slice of bread.

Egg Free Mayonnaise: In a blender, combine 1 block of silken tofu (rinsed and drained), 2 tablespoons olive oil, 1 tablespoon mustard, 2 cloves garlic, 2 teaspoons vinegar, 2-1/2 teaspoons sugar and 1/4 teaspoon salt. Blend until smooth. Makes 1-1/2 cup.
