Cranberry Banana Muffins

Ingredients:
Two whole egg whites -- slightly beaten
3 tablespoons fat-free sour cream
3 tablespoons honey
3 tablespoons molasses
3 tablespoons orange juice, canned
1 teaspoon pure vanilla extract
1 cup bananas - mashed
1cup unbleached flour - sifted
1 tablespoons orange peel - grated
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1cup cranberries -- chopped

Directions:
Preheat oven to 350-degrees.
Prepare muffin pans with cooking spray and flour; set aside.

In a mixing bowl, combine egg whites, sour cream, honey, molasses, orange juice, vanilla extract, and bananas. In another mixing bowl, combine flour, baking powder, baking soda, and cranberries.

Use an ice cream scoop to fill medium muffin pans and bake for 20 to 25 minutes for medium pans.

Recipe makes 12 servings.
