Recipe Ingredients

8 medium baking potatoes
1/2 cup vinegar
1/2 cup boiling water
1 teaspoon salt
1 small onion, finely chopped
Ground black pepper

Recipe Directions

Boil potatoes (whole). Peel potatoes while hot, place in mixing bowl and mash with a fork. Add equal parts vinegar and boiling water to taste. Add 1 to 1-1/2 teaspoon salt. Add 1 small to medium finely chopped onion; stir.

Consistency should be like wet mashed potatoes. Taste it and add a little more water and/or vinegar if necessary (depending on your own individual taste preferences) Mix well and transfer to serving bowl. Sprinkle with pepper. Cover the Bavarian German Potato Salad and let chill overnight (this is important).
