Egg White and Potato Scramble

Egg White and Potato Scramble with egg whites cooked with O'Brien potatoes and added onions seasoned with salt and black pepper.
1/2 teaspoon oil
2 cups potatoes O Brien, thawed
1 cup onions, chopped
1-1/2 cup egg whites, slightly beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
In a skillet, heat oil over medium heat. Add potatoes and onions. Cook eight minutes, or until potatoes are done.
Fold in egg whites, salt, and black pepper. Cook three minutes more or until egg whites are set, stirring constantly.
