Banana-Pineapple Bread

Ingredients:
1/2 cup sugar
1-1/2 cup flour
3/4 teaspoon baking soda
1 teaspoon salt
One egg or egg substitute equal to one egg
Three mashed, ripe bananas
1/4 cup crushed pineapple, drained (save the drained juice)

Directions:
Mix all the dry ingredients together; mix in wet ingredients.

If the mixture is too dry, add some of the saved pineapple juice.

Pour into 8-inch loaf pan sprayed with nonstick cooking spray.

Bake at 350-degrees for about 45-60 minutes until the top is golden brown and a toothpick comes out nearly dry.

Recipe makes one loaf, 10 - 12 servings.
