Almond Chicken Salad

Almond Chicken Salad makes a sensational lunch or light supper. Golden raisins or dried apricots are an added treat.

Recipe Ingredients

2 cups chopped, cooked chicken
1 cup sliced celery
1/2 cup snipped dried apricots or golden raisins
1/3 cup slivered almonds, toasted
1/2 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon ground ginger
Lettuce
Tomato

Recipe Directions

Almonds

In large bowl, stir together chicken, celery, apricots and almonds. Add remaining ingredients. Mix well. Refrigerate.

Line 4 serving plates with lettuce leaves and tomato slices. Top with chicken salad.

*Also great as sandwich filling in pita bread, croissants or crusty rolls.

Almond and Chicken Tip: Enhance a plain-roasted chicken by stuffing it with diced apples, onions, garlic, herbs, and coarsely chopped, roasted almonds.
