Low Fat Recipe
It's a rare person who doesn't enjoy strawberry jam on warm toast, bagels or English muffins. Whip up this low fat treat with a twist of honey for natural sweetening!
4 cups strawberries
2 tablespoons lemon juice
1 package powdered fruit pectin
1-1/2 cups honey
Mix the strawberries, lemon juice and pectin in a heavy-bottomed, stainless-steel pot.
Bring to a boil over high heat. Stir in the honey.
Return to a boil and stir slowly for 10 to 12 minutes. The mixture will resemble a thick syrup when done.
Let cool, then pour into a storage container, cover and refrigerate.
Strawberries are high in vitamin C and other cancer-fighting antioxidants. Strawberries also boast a lot of fiber, plus some iron and potassium. One cup of sliced strawberries is a mere 50 calories, making them a fresh choice for snacking.
