Grasshopper Pie

This tasty pie is low in calories AND carbs! Sugar free lime and lemon gelatins mix with cream, water, peppermint extract and chocolate syrup tops it all off.

Recipe Ingredients

1 small package sugar free lime jello
1 small package sugar free lemon jello
1 cup cream
2/3 cup boiling water
1/2 cup cold water
Ice cubes
1 teaspoon peppermint extract
1/4 cup sugar free chocolate syrup (optional)

Recipe Directions

Grasshopper Pie Meringue:
Beat egg whites until foamy.

Dissolve jello in 2/3 cup boiling water at least 2 minutes until completely dissolved.

Combine cold water and ice cubes to make 1-1/4 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice.

Whip cream until thickened. Add to gelatin mixture. Add the remaining ingredients except the chocolate syrup; stir until thoroughly blended. Pour into a greased pie pan. Chill.

Drizzle chocolate syrup over Grasshopper Pie slices when serving, if desired. Can also pipe whipped cream around edges for a pretty presentation.

Cut into 8 servings. Dot with whipped cream.
