Meringue Cookies

Meringues are pretty much low in everything - except sugar. But this recipe uses absolutely NO sugar. It uses coconut meat, instead.

Recipe Ingredients

4 egg whites
Dash salt
Dash cream of tartar
1 teaspoon vanilla
2 tablespoons good chocolate
1/2 cup nuts, chopped
1/2 cup unsweetened coconut meat, finely shredded

Recipe Directions

Meringue Preheat oven to 275 degrees and butter a cookie sheet well.

Beat egg whites until stiff with dash of salt and dash of cream of tartar. Add vanilla.

In food processor grate chocolate and chop nuts. Mix chocolate, nuts and coconut, then fold into egg whites.

Make tablespoonsful into cookie size drops on buttered cookie sheet--they will not change shape Bake at 275 degrees for 30 minutes.

Note: Do not open the oven door for any reason -- this will ruin the cookies.

Turn oven off leaving cookies inside for two hours; do not open door during this time.

Serving size: 1 cookie. About 1 carb each.
