Peanut Butter Shortbread Cookies

These are very easy and have a delicious shortbread texture even though there is no flour or butter in the recipe!

These are very easy and have a delicious shortbread texture.

1 cup fresh peanut butter

1 cup sugar substitute

1 egg
1/2 teaspoon vanilla

Recipe Directions

Peanut Butter Blend ingredients together with electric mixer.

Drop batter onto a greased cookie sheet by the tablespoon (makes about 20). Press them down with the tines of a fork or bottom of a glass to flatten because they will not spread.

Bake Peanut Butter Shortbread Cookies on the top rack of a 350 degree oven for 10 to 12 minutes or until golden brown on top. Watch them closely because the bottoms tend to brown before the tops.
