Mock Apple Crisp

Instead of apples, you'll use sugar free apple cider mix along with sliced zucchini, sugar subtitute to sweeten and a crust made with pecan meal.

Recipe Ingredients

16 ounces sliced zucchini
3 cups sugar free apple cider mix
1 tablespoon sugar substitute
1/2 teaspoon xanthan gum
1/3 cup pecan meal
1/3 cup spoonable sugar substitute
3 tablespoons melted butter

Recipe Directions

Zucchini Combine zuccini and cider mix in a medium saucepan and bring to a boil.

Reduce heat to low and simmer until zucchini is translucent about one hour.

Remove from heat and put in baking dish. Preheat oven to 350 degrees.

Mix 1 tablespoon Splenda and xanthan gum. Stir into zucchini.

Mix pecan meal and 1/3 cup Splenda. Stir into melted butter.

Spread over top of zucchini. Bake Mock Apple Crisp 15 to 20 minutes or until top is brown.
