Mock Apple CrispIngredients:16 ounces sliced zucchini 3 cups sugar-free apple cider mix 1 tablespoon splenda 1/2 teaspoon xanthan gum 1/3 cup pecan meal 1/3 cup spenda 3 tablespoons melted butter Directions: Combine zuccini and cider mix in a medium saucepan and bring to a boil. Reduce heat to low and simmer until zucchini is translucent about one hour. Remove from heat and put in baking dish. Preheat oven to 350 degrees. Mix 1 tablespoon Splenda and xanthan gum. Stir into zucchini. Mix pecan meal and 1/3 cup Splenda. Stir into melted butter. Spread over top of zucchini. Bake 15-20 minutes or until top is brown.
